Chori Ringan nu Shaak Gujarati Style Recipe
- ½ cup oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp ginger garlic paste
- 1 cup Chori Chawli
- 1 Cup Ringan Brinjal
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ½ tsp garam masala
- Salt to taste
- ½ cup water
- Start by heating oil in a pan and mustard and cumin seeds to it. Fry them for a few seconds.
- Add the ginger garlic paste and fry until it’s cooked.
- Next, add in the chori and ringan and give them a good mix.
- Drop in all the spices, including red chili powder, turmeric, garam masala, and salt. Stir well so that the spices are well combined with the vegetables.
- Pour in 1 cup of water and lightly mix it. Cover and cook for about 10 minutes over medium heat.
- Once done, check if the vegetables are cooked; if not, then dont hesitate to cook them for another 2-3 minutes.

- When cutting the chori (chawli), ensure to string each bean; otherwise, the fiber might feel irritating while chewing.
